How to fry pancakes with soda and without yeast? Prepare all products. Take kefir of any percentage of fat content, but pancakes, of course, will turn out tastier with higher-fat kefir. I prefer to take 1-2 grades of wheat flour. This flour has a slightly creamy color and, in my opinion, is excellent for all types of similar baked goods. But you can choose the flour as you wish.

Preheat the kefir until it curdles slightly. You can heat it on the stove or in the microwave. Pour the kefir into a deep bowl where you will knead the dough for pancakes. Immediately take larger dishes, because... the mass will increase greatly.

Add soda to kefir and mix well.

Pour sugar into kefir and add a little salt. If you wish, especially if you are cooking for children, you can add some flavorings: a teaspoon of vanilla sugar or a pinch of vanillin, ground cinnamon would also be appropriate here.

Mix all products. The kefir will begin to bubble and the mass will increase significantly in volume.

Add flour little by little. Please note that you may need more or less flour than I did. Focus on the consistency of the dough.

For pastries, I always recommend sifting the flour. During sifting, the flour is saturated with oxygen, which means the finished product will be more airy. Always sift your flour!

Mix the dough well so that there are no lumps. The dough will be quite thick, with the consistency of rich sour cream.

Prepare the pan. For pancakes and pancakes, I prefer a cast iron frying pan, but you can use a ceramic or any other one, but it is advisable that it has a non-stick coating. Pour vegetable oil into the frying pan and heat it well. Spoon a little batter into the pan and fry over low heat for about 3-5 minutes, then carefully turn over.

Fry the pancakes on the other side for about 2-3 minutes. By the way, it is not necessary to pour oil into the frying pan; you can simply grease it with a brush with a small amount of oil. Serve pancakes with sour cream, condensed milk or jam. Bon appetit!
