Pour milk into a small ladle and heat it to about 40 degrees. The milk should not be scalding hot or cold. If you have a kitchen thermometer, use it.

In a separate container, combine and stir cocoa powder, granulated sugar, fine salt (to balance flavor) and cornstarch. If these products are added separately without mixing them together, there is a risk that cocoa and starch will “seize” in lumps and it will be very difficult to mix them in the future.
