Lemon juice 2 tbsp
Water 30 ml
Bananas 2 pc
Powdered sugar 2 tbsp
Gelatin 5 g
Heavy cream 180 g

How to make banana mousse? Prepare all the necessary products. First of all, soak the required amount of gelatin in cold water. Leave to stand for 20-30 minutes to allow the gelatin to swell.

When the gelatin is ready to use, make the mousse. To do this, take bananas, peel them, break them into pieces and pour a little lemon juice on them. This is necessary so that the banana does not darken. Using an immersion blender, puree the bananas. The mass should become homogeneous, completely without lumps. The riper the bananas, the sweeter and more delicate the taste of the finished mousse.

Pour the pre-chilled cream into a deep bowl, add powdered sugar and start beating with a mixer at low speed. After two minutes, when the powder has dissolved, increase the speed to maximum and beat until thickened for 3-5 minutes. The cream must be high in fat, from 33%, otherwise it will not whip.

Then add banana puree to the buttercream and mix until smooth using a whisk.

Heat the swollen gelatin in the microwave until it dissolves and becomes liquid. Start beating the banana mixture with a mixer at low speed and gradually pour in the liquid gelatin so that it is immediately incorporated into the mousse.
