Dough:

Wheat flour 250 g
Cottage cheese 180 g
Milk 80 ml
Sugar 80 g
Vegetable oil 50 ml
Baking powder 9 g

Sour cream 500 g
Sugar 80 g
Eggs 3 pc

Vanilla sugar 1 tbsp

How to make sour cream? Prepare the necessary ingredients for the dough. It is better to take the cottage cheese slightly moist, not lumpy. Fat content doesnʼt really matter. Cottage cheese in briquettes is ideal — it is quite soft, moderately moist, without small grains. If your cottage cheese is dry and lumpy, beat it in a blender with 1-2 tbsp. l. milk or rub through a sieve. Use premium flour.

Combine cottage cheese with milk, sugar, vegetable oil and baking powder.

Mix everything thoroughly.

Sift flour into the dough and knead into an elastic dough.

The dough may require a little more or a little less flour — it all depends on the moisture content of the cottage cheese and the quality of the flour. Therefore, it is better not to add all the flour to the dough at once. Add half first, and then gradually add the rest as needed. The finished dough should not stick to your hands.

Spread the dough into a greased pan and make high sides. The diameter of the mold can be from 24 to 28 cm.

Prepare ingredients for filling. Use thicker sour cream, from 20% and higher. With liquid sour cream, the filling will take a long time to set and, as a result, may not set completely, while the cake will be ready. Use large, selected eggs. If the eggs are small, take 4 pieces.

In a bowl, combine sour cream, eggs, sugar, vanilla sugar and starch.

Mix everything thoroughly. You should get a semi-viscous mixture.

Pour the sour cream and egg mixture onto the crust.

Wash and dry the berries. You can use any berries you like — it could be cherries, strawberries, currants, blueberries, etc. I used a mixture of fresh black and red currants with gooseberries.

Sprinkle some berries evenly on top of the pie so that they sink into the dough. Place the pie in an oven preheated to 180°C for 15 minutes. During this time, the sour cream filling will set and thicken.

Remove the pie from the oven and sprinkle with the remaining berries. Return the pie to the oven and bake for about 20 minutes more.
