Dough:

Egg yolks 2 pc
Sugar 70 g
Butter 160 g
Vanillin to taste
Wheat flour 250 g

Filling:

Pears 2 pc
Raisin 50 g
Sugar 1 tbsp
Lemon juice 1 tbsp
Lemon zest 1 tsp
Ground cinnamon 1 tsp

How to make shortcrust pastry pie with pear and raisins? First prepare the dough. Remove the butter from the refrigerator in advance so that it becomes soft. Instead of vanillin, you can take vanilla sugar (0.5 tbsp).

Mix the flour with baking powder and sift through a sieve to enrich it with oxygen. This will make the dough more crumbly and risen.

Grind soft butter with sugar until smooth. It is enough to use a regular fork.

Add the yolks to the sugar-butter mixture and stir.

Add flour sifted with baking powder into the resulting mass. Stir quickly. When preparing shortcrust pastry, do not delay the process so that the butter does not melt too much from the warmth of your hands.

The dough should be soft and homogeneous.

Divide the dough into 2 unequal parts. Wrap the dough in cling film and refrigerate for 30 minutes.

Prepare the necessary ingredients for the filling. Any thick fruit jam will do. I used homemade apple juice. Add cinnamon to taste and as desired.

Rinse the raisins thoroughly and dry.

Wash the pears, dry them, remove seeds. Cut the pears into small cubes.

Combine prepared pears, pure raisins, cinnamon, lemon zest and lemon juice. If the fruit is not sweet enough, add sugar to taste. But keep in mind that the raisins will add a noticeable sweetness to the filling. Mix everything well.

Remove a large piece of dough from the refrigerator. Quickly roll out the dough into a round that is larger than the diameter of the pie pan.

Cover the bottom of the mold with parchment. Roll the dough onto the rolling pin and transfer it to the pan. Carefully distribute it along the bottom, while forming sides. I have a mold with a diameter of 18 cm.

Brush the dough evenly with jam.

Place the filling and smooth it out.

Roll out the smaller chilled part of the dough into a layer slightly smaller than the diameter of the mold. I left some dough to decorate the pie.

Cover the filling with a second layer of shortcrust pastry, carefully joining the edges. I made curly cutouts and decorated the top of the pie. If you donʼt plan to decorate the pie, simply make holes or punctures in the top crust so that the moisture in the filling evaporates during baking.

Bake the fruit pie in an oven preheated to 190 degrees for about 30 minutes until the top is golden brown. Focus on the operating characteristics of your oven and, in accordance with this, adjust the baking time and temperature. Let the finished pie cool slightly and remove from the pan.
