Baked Fish and Cabbage Pie

Homemade baked goods for any occasion — incredibly delicious! Pie with fish and cabbage is baked in the oven. Yeast dough based on sour cream turns out to be very soft and tender. For the filling you can use any fish fillet and your favorite spices. Such pastries can easily replace lunch or dinner.

Ingredients (10 portions)

For dough:

Eggs 1 pc
Sugar 15 g
Salt 0.5 tsp
Dry yeast 3 g
Sour cream 80 g
Water 50 ml
Vegetable oil 4 tbsp
Wheat flour 235 g

For filling:

White cabbage 280 g
Fish fillet 250 g
Bulb onions 1 pc
Carrot 1 pc
Vegetable oil 2 tbsp
Salt to taste
Ground black pepper to taste
Basil 0.5 tsp

For lubrication:

Milk 10 ml
Vegetable oil 1 tsp

How to make fish pie with cabbage in the oven? First prepare the necessary ingredients for the filling. You can take any fish. I have pollock fillet, previously cleaned of skin and bones.

Peel the onions, wash them, cut them into small cubes.

Peel the carrots, wash them, grate them on a coarse grater.

Chop the cabbage into small strips.

In a frying pan with vegetable oil, lightly fry the cabbage, carrots and onions, add salt, if desired, add ground black pepper and simmer, stirring occasionally, until cooked. If your cabbage is too dry, add a little water and cook until the liquid evaporates. Cool the cabbage filling. Cut the fish fillet into small pieces. Salt the fish. I added dry basil. You can use any spices you like. Stir the fillets.

Measure out the required ingredients for the dough. They should be at room temperature. Sour cream is suitable for any fat content.

How to knead the dough for a pie with cabbage and fish? Combine yeast in a bowl, 1 tsp. sugar and warm water, mix. Leave the yeast mixture until a fluffy foam appears on the surface. Beat the egg with salt and the rest of the sugar until smooth.

Add sour cream at room temperature, stir.

Sift flour into the resulting mass. It is important to sift the flour to saturate it with oxygen. The dough will rise easily and the baked goods will be fluffy. Donʼt pour out all the flour at once. Add most of it, mix the dough with a spoon.

The dough turns out soft and does not stick to your hands. Place the dough in a bowl, cover with a towel and leave in a warm place to rise.

The volume of the dough should increase 2-2.5 times. My dough came out in 1 hour 15 minutes. Rising time may vary depending on air temperature and yeast activity.

Gently knead the dough and place it on a table dusted with flour. Divide the dough into 3 unequal parts. More for the base of the pie, less for the top and I left some dough for decoration. If you do not plan to decorate the pie, divide the dough into 2 parts.

I baked the pie on a baking sheet lined with parchment. You can bake in a mold with a diameter of 22-23 cm. Roll out most of the dough into a round layer.

Place fish fillets on the dough, not reaching the edges of the dough.

Spread the cabbage filling evenly onto the fish layer.

Roll out the smaller part of the dough in the same way as the first and cover the filling with it. Bring the edges of the dough together well.

Make a small hole in the middle of the cake to allow steam to escape while baking. You can cut out any shapes from the remaining dough and decorate the top of the pie.

Cover the cake with a towel and leave to proof for 15 minutes. Turn on the oven to preheat at 180 C. Before baking, brush the top of the pie with a mixture of vegetable oil and milk. Milk can be replaced with cream or sour cream.

Bake the pie in an oven preheated to 180 C for about 30-35 minutes until golden brown. If the top is browned but the inside of the pie is not yet ready, cover it with a layer of foil.
