Basic:

Sugar 170 g
Wheat flour 220 g
Butter 140 g
Milk 20 ml
Eggs 3 pc
Baking powder 1 tsp
Vanilla sugar 1 tbsp

Filling:

Wheat flour 1 tbsp
Currant 200 g

Glaze:

Lemon juice 1 tbsp
Water 1 tsp
Powdered sugar 3 tbsp

How to make a pie with frozen berries in the oven? Very fast and simple. To begin, prepare the necessary ingredients according to the list. Take the highest grade flour. Large, selected eggs are needed. The butter should be at room temperature, so remove it from the refrigerator in advance.

Combine eggs at room temperature with sugar and vanilla sugar and beat with a mixer until fluffy. The airiness of your cake depends on how you beat the eggs. You can’t beat the mixture until it’s white and thick—the whites will lose the air bubbles that lift the dough. And in this case, even baking powder will not help. The dough will either not rise at all or rise very weakly.

Add soft butter and milk and mix with a mixer. the mass will become dense and airy.

Add sifted flour with baking powder to the egg-butter mixture. Mix everything with a mixer until smooth. You will get a soft thick dough. Please note that you may need more or less flour depending on the quality of the flour itself and the size of the eggs. Therefore, focus on the consistency of the dough. The dough is ready.

Now prepare the filling. You can make this pie with different berries — raspberries, lingonberries, currants, cranberries, blueberries. But it is preferable to use sour berries. I have a mixture of red and black currants.

Without defrosting, divide the berries into two equal parts. Sprinkle one half of the berries with flour. The second part of the berries will be needed for the top of the pie.

Gently fold the berries, rolled in flour, into the dough.

Line a baking dish (I have 11x30 cm) with oiled parchment and place the dough into it.

Scatter the remaining half of the berries on top. Bake the pie in a preheated oven for about 40 minutes at 180°C. Then leave the pie in the turned off oven for another 5-10 minutes until the top browns.

While the cake is baking, prepare the frosting.

In a bowl, mix powdered sugar, lemon juice and water. Mix everything until you obtain a liquid consistency.
