How to make a classic kefir pie? Prepare your food. It’s better to take thicker kefir, at least 2.5%. Take it and the eggs out of the refrigerator in advance to keep them warm — a pie made from warm ingredients will rise better. You can adjust the amount of sugar to your taste. Instead of vanillin, you can use vanilla sugar or vanilla.

Pour the kefir into a larger container and pour soda into it. Stir and let sit while you mix the other ingredients. During this time, the acid contained in kefir will react with soda, resulting in the release of carbon dioxide, which will raise the sponge cake during baking. Keep in mind that kefir will increase in size, take a larger bowl.

Beat the eggs into a bowl. Start beating them with a mixer, gradually adding sugar. Add vanilla at the end. Beat the eggs until fluffy and light.

Sift flour into a bowl. By doing this you will not only remove possible debris, but also saturate it with oxygen, which will make the cake airier.

Take a baking dish. Grease it with a small amount of vegetable oil (if the mold is silicone, there is no need to grease it). I baked the cake in a 20cm ring, using foil instead of a bottom. Pour the dough into the mold.

Bake the pie in the oven, preheated to 180°C, top-bottom mode, without convection. Baking time is from 25 to 40 minutes, it will depend on the features of your oven and the size of the pan. The cake will brown and rise. Check readiness with a wooden skewer — it will come out dry from the middle.
