How to bake cranberry shortcake in the oven? To begin, prepare the necessary ingredients according to the list. Start cooking with the dough. The amount of sugar can be reduced or not added to the dough at all. Take the highest grade flour. The butter should be cold, so remove it from the refrigerator immediately before cooking. Turn on the oven at 180°C in advance.

Grind the yolks with sugar.

In a bowl, combine flour, chopped butter and grind into fine crumbs. To save time, you can mix everything in a blender bowl and beat until fine crumbs. Add the yolks with sugar to the crumbs. Using your hands, quickly knead into a homogeneous, elastic shortbread dough.

Spread the dough over the bottom and sides of the baking dish (Ø 24-26 cm). I use a regular pan, but if you are afraid that the fragile sides of the cake will crumble when you remove it from the pan, then it is better to use a springform pan. Place parchment on top and add a load — dry beans, peas or special balls. This method will prevent the dough from swelling when baking. Place the pan in an oven preheated to 180℃ for 10-15 minutes. The exact time depends on your oven.

Now make the cranberry pie filling. Instead of fresh cranberries, you can add homemade or store-bought pureed cranberries with sugar. The amount of sugar can be adjusted to taste.

Wash the cranberries, sort and dry. Pre-defrost frozen berries and dry them on paper napkins.

Leave some of the berries whole, beat the rest with an immersion blender. You can also mince the berries or crush them with a masher.

In a bowl, combine cranberry puree, whole berries and sugar and stir. If you are worried that the filling will be too liquid, you can add 1-2 tbsp. l. corn starch.

Prepare the ingredients for the meringue. The amount of powdered sugar can be adjusted to taste. The whites should be cold, without any admixture of yolk, and the container in which they are stored and whipped should be clean, without droplets of water. If at least one of these two conditions is violated, then the whites will not whip into foam.

Beat the cold egg whites with a mixer and salt into a fluffy foam. Continue beating, gradually adding powdered sugar, until stiff peaks form. Spread the cranberry filling onto the hot crust and smooth it out.

Using a piping bag fitted with a star tip, spread the beaten egg whites over the top. You can just gently spread the whites with a spoon.
