Vegetable French Quiche Delight

A hearty and healthy pie — you just want to eat it as soon as possible! The quiche pie turns out very tasty and tender. My husband called it “Women’s”, or “Dietary”, so he boldly ate it as a bite with meat :) but I really liked the pie on its own!

Ingredients (10 portions)

For dough:

Wheat flour 180 g
Butter 120 g
Salt 0.25 tsp
Water 2 tbsp
Lemon juice to taste

Filling:

Eggplant 1 pc
Zucchini 1 pc
Champignon 4 pc
bell pepper 1 pc
Tomatoes 1 pc
Feta 100 g
Vegetable oil 2 tbsp

Fill:

Cream 200 ml
Chicken eggs 2 pc
Feta 30 g
Ground black pepper to taste

First, letʼs start with the filling. Turn on the oven to preheat to 200C. Wash and dry vegetables and mushrooms.

Cut the eggplant and zucchini into slices (or slices), add salt and pepper, and sprinkle with vegetable oil if desired.

Place the vegetables and mushrooms on a baking sheet and bake until tender (about 15-20 minutes). While the vegetables are baking, letʼs make the dough.

Sift the flour with salt and quickly grind it with butter into crumbs; for convenience, the butter can be cut into small cubes.

Add cold water and a few drops of lemon juice to the creamy crumbs and knead the dough. There is no need to knead the dough for a long time, the main thing is to bring everything together. Place the finished dough in a bag and put it in the refrigerator for 20-30 minutes.

In the meantime, our vegetables are already ready, we place the peppers in a bag for 10 minutes so that they sweat.

Afterwards we peel off the skin and do the same with the tomato. Chop the peeled peppers, tomatoes and mushrooms.

Make the filling, lightly beat the eggs with a fork, add cream, salt and pepper, you can also crumble feta here, but I add it separately to the vegetables.

Roll out the chilled dough (about 5 mm thick) and place it in the mold. We spread our filling on the dough in layers, sprinkle each layer with feta. Letʼs start with eggplants
