Raspberry Berry Sponge Cake Delight

During berry season, enjoy the delicate taste of raspberry pie! I think you have already guessed that instead of raspberries you can use any berry, each of which will make the pie magical in its own way. The pie dough turns out very tender, airy, it just melts in your mouth. In addition to fresh berries, you can safely use frozen ones; add them straight from the freezer without defrosting them first. You can serve this pie with whipped cream or ice cream, but I think itʼs also great on its own! Help yourself!

Ingredients (6 portions)

Basic:

Sugar 110 g
Wheat flour 200 g
Butter (room temperature) 125 g
Raspberries 150 g
Sour cream 2 tbsp
Baking powder 1 tsp
Vanilla sugar 1 tsp
Egg whites 3 pc

To prepare the pie, we need butter at room temperature, 3 egg whites, sugar, sour cream with a fat content of 15-20%, raspberries, flour, baking powder and, if desired, vanilla sugar.

In a separate container, first beat the whites to soft peaks with half the amount of sugar.

Take another bowl and beat the butter with the remaining amount of sugar and vanilla sugar until fluffy. Add sour cream and beat again until fluffy.

Add half the sifted flour with baking powder to the cream mixture. Mix until smooth (you can also use a mixer at this stage).

Add the whipped whites in several additions (we mix everything with a spatula, I just forgot to put the mixer away). For convenience, first add a third of the whites and mix thoroughly so that the dough becomes more liquid, and then add the remaining amount of whites and now, gently mix the dough with a spatula until smooth.

Add the remaining flour and knead the dough.

Place the finished dough in a prepared pan with a diameter of 22-24 cm, and place raspberries on top. And put it in an oven preheated to 180 C for 25-30 minutes. Check readiness with a skewer.

Let the finished pie cool, sprinkle powdered sugar on top (optional) and serve.
