Ingredients (12 portions)

Basic:

Sunflower oil 0.5 tsp

For dough:

Wheat flour 260 g
Butter 80 g
Water 25 ml
Salt to taste
Sugar 60 g

For filling:

Cottage cheese 300 g
Sour cream 100 g
Eggs 2 pc
Sugar 0.5 cup
Vanilla sugar 1 tsp

How to bake shortbread pie with cottage cheese and sour cream? Prepare the necessary ingredients for the dough. Melt the butter in the microwave or in a water bath and cool slightly. Whisk together the melted butter, sugar and salt.

Add water to the butter and sift in the wheat flour in parts.

Knead a tight dough, gather it into a ball and, covering the bowl with cling film, put it in the refrigerator for half an hour. Turn on the oven to warm up to 180 ⁰C.

After half an hour, remove the dough from the refrigerator and roll it into a circle with a diameter larger than the size of the pan in which you will bake the pie. I got a circle with a diameter of 26 cm: 22 cm inside and 4 cm sides. I used a silicone mold. Pre-grease the bottom of the mold with sunflower oil. Prick the dough with a fork. Bake the crust in the oven for 20 minutes. If you donʼt do this, the pie dough is almost guaranteed to be raw.

Prepare the necessary ingredients for the filling. Place cottage cheese and sour cream in a container convenient for whipping. Add sugar and vanilla sugar.

Using an immersion blender, beat the mixture until smooth. Instead of a blender, you can first grind the cottage cheese through a sieve, and then mix with sour cream and sugar.

Beat the eggs with a mixer until they slightly increase in volume and abundant bubbles appear.

Gently fold the eggs into the curd mixture using a spatula.

Pour the filling into the mold, onto the crust, and bake for 35-40 minutes at 180°C. Bon appetit!
