Chocolate Cherry Cottage Cheese Pie

A delicate curd layer and juicy cherries will win your heart! The pie turns out tender, crumbly and moderately sweet, so if you like it sweeter, you can slightly increase the amount of sugar in the dough or filling. Help yourself!

Ingredients (9 portions)

For dough:

Wheat flour 230 g
Powdered sugar 40 g
Cocoa 15 g
Butter 115 g
Egg yolks 1 pc
Sour cream 1 tbsp
Baking powder 0.5 tsp

For the curd layer:

Egg yolks 1 pc
Cottage cheese 300 g
Sugar 3 tbsp
Vanilla sugar 1 tsp
Starch 1 tbsp

For the cherry layer:

Sugar to taste
Starch 1 tbsp
Cherry 150 g

Dough ingredients

Sift flour, cocoa, powdered sugar and baking powder into the bowl of a food processor.

Add cold butter cut into small pieces and quickly rub everything until crumbly.

Add the yolk and 1 tbsp to the butter crumbs. l. sour cream. Mix, we should get a moist crumb that easily gathers into a lump, if the mixture turns out dry, add a little sour cream.

Collect the resulting wet crumbs into a ball.

Divide the dough into 2 parts, one part should be larger than the other. Place the dough in the refrigerator for 15 — 20 minutes (or better yet, longer).

Add sugar, vanilla sugar and egg yolk to the cottage cheese and mix.

Add a spoonful of starch (semolina or flour), mix until smooth.

Squeeze the juice from the cherries, add starch and, if desired, sugar (I did not add), mix.

Assembling the pie. Roll out most of the dough and place it in the mold, forming low sides.

Place the curd filling on top.

Place cherries on the cottage cheese. If the sides turn out to be high, then we trim them.

We grate a smaller part of the dough (to make the dough easier to grate, place it in the freezer for 15 minutes) and level it over the surface of the pie. Bake the cake at 180 C for about 45 minutes. Let the finished pie cool completely and only then cut it.
