Easy Corsican Easter Pie: Fiadone

A traditional Corsican pie baked for Easter! It’s very easy to prepare, just mix everything and put it in the oven. As it cooks, a delicious vanilla-citrus aroma spreads throughout the house!

Ingredients (8 portions)

Basic:

Salt 2 g
Sugar (as much as possible) 50 g
Corn starch 1 tbsp
Eggs 3 pc
Vanilla extract (or replace with vanilla sugar) to taste
Zest (zest of one lime) to taste
Ricotta 250 g

Preheat the oven to 200 degrees. Beat eggs and sugar until white. Vary the amount of sugar according to your taste, some people like it very sweet, for example children, and others like it practically without sugar, so that it has a completely cheesy taste.

Add zest, vanilla extract and starch.

Next add the ricotta.

Mix well.

Line the pan with baking paper. Pour the resulting mass into it.

Place in the oven for about 45 minutes, reducing the heat to 180 degrees. Bake until golden brown.

We wait until it cools down a little. Cut into squares of the desired size, or triangles (whose shape is round).
