How to bake Tsvetaevsky apple pie? Prepare the necessary ingredients for the dough. Be sure to sift the flour so that the future cake turns out fluffy and airy. The amount of flour may be needed more or less. Everything will depend on its quality and variety. Just in case, sift more of it than indicated in the recipe. Baking powder can be replaced with water. Read more about this in a separate article at the link at the end of the recipe.

Butter can be melted in the microwave on the appropriate setting (according to the instructions) or in a water bath. How to properly melt butter in a water bath? You will need two containers of different diameters. Pour water into a large one. Place the smaller container on top so that it is about half immersed in water. Place the butter cut into pieces into it. Under the influence of boiling water, the butter will begin to melt. When it becomes liquid, turn off the heat.

When the butter has cooled (to room temperature), combine it in a bowl with sour cream and whisk until smooth.

Add the sifted flour and baking powder little by little, stirring the mixture well each time until smooth. To better distribute the baking powder throughout the dough, mix it first with a small amount of flour and add to the sour cream mixture. You can replace it with soda (1 tsp). Quench it with 9% vinegar (1 tbsp), immediately pour into the mixture and mix quickly and thoroughly. It is important not to overdo it with soda, as the baked goods will be spoiled by its specific taste.

Knead with your hands a soft and not very tight dough (it should be weaker than for rolling). Add flour as needed, achieving a homogeneous, elastic consistency. Gather the dough into a ball. If you have time, wrap it in cling film and put it in the refrigerator for 1 hour. The chilled dough will be even more flexible and easier to work with. But this step is not required. You can skip it.

Take a mold with a diameter of about 18-20 cm. A round, rectangular or square shape will do. Cover it with baking paper, otherwise the cake may burn. To make it easier to remove the product, make handles like these (as in the photo). To do this, cut a sheet of parchment so that it extends beyond the mold and cut wide strips from it. Transfer the dough into the mold. Use your hands to spread it over the bottom, forming low sides.

For the filling, I chose two large apples, red and green. Different color combinations will make the cake more colorful. Which apples are best? Choose juicy, dense fruits with a sweet and sour taste. When baked, soft ones will turn into porridge, and all the beauty will be lost.

Cut the apples in half. Cut out the core with the seeds. There is no need to peel the skin. But if it is damaged or unsightly, it is better to cut it off. Cut the fruit into thin, neat slices or small cubes. To prevent apples from browning, sprinkle them with lemon juice.

Place apple slices on the dough base. Distribute them evenly in a random order or fan out the slices tightly to each other.

Prepare the ingredients needed to prepare the filling. Sour cream is suitable for any fat content. Please note that a product with a higher percentage of fat content will taste better, but will also contain more calories. Also turn on the oven to 180 degrees in advance.

In a suitable sized container, mix sour cream, regular and vanilla sugar. Instead of vanilla sugar, you can use powdered vanillin (approximately on the tip of a knife). It is important to be careful with the dosage. Be sure to read the instructions on how much and how to add it! If used incorrectly, it can cause bitterness and spoil the taste of baked goods.

In a separate bowl, beat the egg. You donʼt need to beat it too hard, just whisk it with a whisk until smooth and fluffy.

The sour cream filling should thicken and shake a little when shaking the pan.
