Cherry Puff Pastry Snail Pie

From available ingredients, with replaceable filling! Snail pie with cherries is prepared in a hurry, because we use ready-made puff pastry for it. This is a French-style dessert, crispy and tasty, the kind that could easily be served in Parisian cafes!

How to make Snail Pie? Prepare the necessary ingredients. It is better to take puff pastry without yeast. The yeast part makes the dough heavier, and we need a light crumbly puff structure.

Wash the cherries, dry them and remove the pits. Drain the juice that has been released, or better yet, place the prepared cherries on a paper napkin to absorb all excess moisture. If the cherries are frozen, first defrost the berries and also drain the released juice. The finished weight of cherries after processing should be 300 g, so take berries with a reserve.

Thaw the puff pastry. I usually use the dough in sheets, but for this recipe itʼs better to use the dough rolled into a roll, since we will need to cut it into long strips. And the dough in the roll has just the right length. Lightly roll out the puff pastry on a floured board into an even rectangle. You need to roll in one direction, from top to bottom, to increase the width of the puff layer.

Cut the dough into strips of equal width about 5 cm. This can be done with a knife or a special round pizza cutter. Using a sieve, sprinkle the dough evenly with starch. This is necessary so that the juice released from the cherries during baking does not leak out of the dough.

Place the cherries in a row on the strips. Sprinkle sugar evenly on top of the berries.

How to roll a snail pie? Bring the edges of the dough together and pinch to make long dough sausages with berries inside. At first I tried to pinch the edges of the dough, but the sugar did not allow the edges to stick together properly. So I started wrapping the berries in the dough (the video shows how to do this).

Place the resulting sausages in a round baking pan (Ø 26 cm) lined with parchment, seam side down. Connect the edges of the sausages to each other so that the juice from the berries does not flow out through the joints of the dough pieces. I still had some puff pastry left over, which I rolled into small balls to decorate the pie. If you have any unused berries, you can make balls like these with cherries inside.

Sprinkle the snail with almond flakes if desired. You donʼt have to sprinkle anything at all. Place the pie in an oven preheated to 180°C for about 40 minutes.

Remove the finished snail from the mold, transfer to a dish, let cool slightly and sprinkle with powdered sugar if desired. Cut the snail into portions and serve, perhaps with a scoop of vanilla ice cream — it will go perfectly with this pie. Bon appetit!
