Recipe instructions

Step 1

Step 1
How to make a pie with saury and rice in the oven from yeast dough? Prepare the necessary ingredients for the dough. You can use fresh yeast. How to properly replace dry yeast with fresh yeast can be found in the article after the recipe description.

Step 2

Step 2
Make a dough. Warm the milk slightly (36-37 C). In a bowl, combine yeast, sugar, warm milk and 35 grams of sifted flour (of the total amount). Mix everything well until the lumps of flour disappear. Cover the dough with a towel or cling film and place in a warm place for about 20 minutes.

Step 3

Step 3
Melt the butter over low heat or in the microwave. Let the oil cool. Read how to melt butter correctly at the end of the recipe.

Step 4

Step 4
The dough will rise and a fluffy yeast “cap” will form on the surface.

Step 5

Step 5
In a large, tall bowl, beat the egg and salt until smooth.

Step 6

Step 6
Add the dough, stir lightly.

Step 7

Step 7
Pour in the non-hot butter and stir.

Step 8

Step 8
Sift flour into the resulting mass. The flour must be sifted to saturate it with oxygen. Thanks to this, the dough will rise well, and the baked goods will turn out fluffy and airy. Do not pour out all the flour; you may need less than the specified amount. Sift in about half the flour and stir the dough with a spoon.

Step 9

Step 9
Add the rest of the flour in small portions while mixing the dough. Focus not on the amount of flour, but on its consistency. If the dough is still sticky after adding all the flour, add a little more flour. You can read more about flour and its properties in a separate article, link at the end of the recipe.

Step 10

Step 10
Knead a soft, tender dough that almost does not stick to your hands. Place the dough in a bowl, cover with a towel and place in a warm place to rise.

Step 11

Step 11
Prepare the pie filling. You can take saury in oil or natural. I have the last option. Any canned fish will also work.

Step 12

Step 12
Rinse the rice well and boil in boiling salted water until tender. Place the rice in a sieve to drain the water. Cool the rice. Read about all the nuances of choosing rice in the article at the link at the end of the recipe.

Step 13

Step 13
Pre-peeled onions, wash and cut into small cubes.

Step 14

Step 14
In a frying pan with vegetable oil, fry the onions over medium heat until golden brown, cool.

Step 15

Step 15
The dough has risen and its volume has increased by at least 2 times. The rising time will depend on the activity of the yeast and the air temperature. My dough came out in 1 hour 20 minutes.

Step 16

Step 16
Punch down the dough and place it on a table sprinkled with flour. Divide the dough into three parts: more for the base of the pie, less for the top and a little dough for decoration.

Step 17

Step 17
Roll out part of the dough for the base into a round layer.

Step 18

Step 18
Using a rolling pin, transfer the rolled out dough to a parchment-lined baking sheet. The pie can also be baked in a mold with a diameter of 24-26 cm. The corresponding articles at the end of the recipe will help you choose parchment and a suitable baking dish. Place the rice on the dough, leaving the edges of the dough a little loose.

Step 19

Step 19
Spread the fried onions over the rice.

Step 20

Step 20
Break the saury into small pieces or mash with a fork and place evenly on top of the rice and onions. You can pour a little canning liquid over the fish to make the filling juicier.

Step 21

Step 21
Roll out a smaller part of the dough in the same way as the first and place it on the filling. Pinch the edges of the dough well.

Step 22

Step 22
Make a small hole in the middle of the cake to allow steam to escape while cooking. From the remaining dough you can cut out any figures and elements to decorate the top of the pie.

Step 23

Step 23
Cover the formed cake with a towel and leave to proof for 10-15 minutes. Turn on the oven to preheat at 180 C. Before baking, brush the pie with a mixture of yolk and milk.

Step 24

Step 24
Bake the pie in an oven preheated to 180 C until golden brown, approximately 30-35 minutes. The baking time and mode may be different; set them taking into account the operating characteristics of your oven. Please read after the steps for important information on this topic. Check readiness with a wooden skewer; it should come out of the dough dry. If the top of the pie is browned prematurely but the inside is not yet baked, cover it with foil and bake until done.

Step 25

Step 25
Cool the pie with saury and rice a little, cut into pieces and serve. Bon appetit!
