Butter 150 g
Baking powder 0.5 tsp
Wheat flour 250 g
Sugar 30 g

For filling:

Cottage cheese 350 g
Eggs 2 pc
Sugar 50 g
Vanilla sugar 1 tsp

How to make a pie Sprinkle with cottage cheese? Measure out the ingredients needed for the shortbread crumbs. The butter needs to be frozen, so remove it from the freezer just before cooking.

Sift the flour into a suitable sized bowl until the flour becomes fluffy. This will make the sand crumbs more crumbly.

Combine flour with sugar, baking powder and vanilla sugar, mix.

Grate the frozen butter into the dry mixture using a coarse grater.

Rub the cold butter into the flour mixture with your hands. Do this quickly to prevent the butter from melting from the heat of your hands. Place the shortbread in the refrigerator.

Prepare the pie filling. Take soft cottage cheese, without hard grains, not very wet, but not dry either. Vanilla sugar can be replaced with vanillin (at the tip of a knife).

To make the filling more tender, grind the cottage cheese in a blender, adding eggs, sugar and vanilla sugar. Add the amount of sugar to taste.

The result is a homogeneous, smooth, tender curd mass.

Line the bottom of the baking pan with parchment. My mold diameter is 18 cm. Lightly grease the sides of the mold with vegetable oil. Remove the shortbread crumbs from the refrigerator and pour about 3/4 into the mold. Using light pressure, shape the bottom and sides of the pie.
