Honeysuckle Streusel Pie with Perfect Berry Sweetness

During honeysuckle season, bake this pie — the taste is indescribable. Another recipe with honeysuckle to add to my collection. There are still 2-3 berries left for the recipe and that’s it. Now wait until next year. I wanted to cook meat with honeysuckle sauce, but apparently that wasn’t the case this year. But next year I will have 2 more bushes and there will be a little more berries. As for this pie. It is simply indescribably delicious. Thanks to cornstarch, honeysuckle thickens and does not spread. After cooling, it looks like viscous jam. The crumbly shortbread sweet streusel and berry sourness just go together perfectly.

Ingredients (8 portions)

Dough:

Wheat flour 200 g
Sugar 100 g
Butter 100 g
Baking powder 1 tsp
Cinnamon 0.5 tsp
Salt 0.25 tsp

Filling:

Honeysuckle 300 g
Corn starch 1 tbsp

Streusel:

Wheat flour 140 g
Sugar 100 g
Butter 120 g
Salt 0.25 g

Dough. To prepare the dough we will need: flour, cold butter, sugar, baking powder, cinnamon and salt.

Cut the cold butter into cubes.

In a blender, combine flour, sugar, baking powder, cinnamon and salt.

Place all ingredients in a blender bowl and beat into fine crumbs.

Streusel. To make streusel we need: flour, cold butter, sugar and salt.

Cut the cold butter into small cubes.

Combine flour, sugar and salt in a blender. Add cubes of butter. Beat into crumbs.

Pour the streusel into a bowl and place in the refrigerator. The streusel pieces should be larger, about 1/4 inch for the dough.

Filling. To prepare the filling, we need honeysuckle and corn starch (you can replace it with potato starch, but take only 1 tsp).

Wash the honeysuckle, sort and dry.

Gently, so as not to crush, mix the berries with cornstarch.

Line a baking pan with parchment and grease with butter. Place dough crumbs on the bottom. Flatten and lightly compact.

Spread honeysuckle evenly on top.

Sprinkle streusel on top. Bake the pie for about 40 minutes at 180°C.
