Mixed Berry and Rhubarb Summer Pie

This pie will turn out delicious with absolutely any berries. Soft dough, slightly crispy at the edges and sweet aromatic berries — you get a real summer pie. You can prepare it from any berries and fruits. I chose sour rhubarb, bright raspberries and fragrant strawberries. All from our dacha.

Ingredients (8 portions)

Dough:

Wheat flour 180 g
Sugar 120 g
Butter 100 g
Eggs 2 pc
Milk 3 tbsp
Vanilla sugar 1 tsp
Baking powder 1 tsp
Salt 1 g

Filling:

Rhubarb 200 g
Raspberries 150 g
Strawberries 50 g

Dough. To prepare a pie with rhubarb and wild berries we will need: flour, soft butter at room temperature, sugar, eggs, milk, vanilla sugar, baking powder and salt.

Combine eggs, soft butter, sugar and vanilla sugar and beat with a mixer until fluffy.

Sift flour with baking powder.

Pour in the milk and whisk again.

Add flour to the dough.

Add salt to the dough and mix again.

Filling. To prepare the filling we will need: several stalks of rhubarb, raspberries and strawberries. You can also use currants, blueberries, blueberries and other berries to taste.

Wash the rhubarb, peel and cut into medium pieces.

Wash the raspberries and strawberries, dry them and remove the stems.

Place the dough in a greased mold and smooth it out.

Top with rhubarb, strawberries and raspberries. Bake the pie for about 30 minutes in an oven preheated to 180°C.

Cool the finished pie and cut into pieces. If desired, you can sprinkle the cake with powdered sugar. I didn’t do this, because firstly, it turned out to be moderately sweet, and secondly, the powdered sugar would hide the entire beautiful multi-colored surface underneath. You can serve the pie with any drinks, but I especially liked it with warm milk. Bon appetit!
