Recipe instructions

Step 1

Step 1
How to bake a pie with candied fruits in the oven? First, prepare all the necessary ingredients for the streusel. The oil should be cold. You can first keep it in the freezer for 10-15 minutes. Walnuts can be supplemented or replaced with other nuts to taste. Raisins can also be supplemented or replaced with other dried fruits. If the raisins are hard, then first fill them with hot water for 10-15 minutes, then drain the water and dry the raisins on a towel.

Step 2

Step 2
Lightly chop the walnuts with a knife.

Step 3

Step 3
Cut the cold butter into small pieces or grate it. Combine butter and flour in a separate bowl and rub into crumbs with your hands.

Step 4

Step 4
Add sugar, raisins and nuts to the crumbs and mix. Regular sugar can be replaced with brown sugar, it will give a pleasant caramel taste. Place the resulting streusel in the refrigerator.

Step 5

Step 5
Prepare the necessary ingredients for the dough. Eggs I used the CO category. Flour of the highest grade. Remove the butter from the refrigerator in advance; it should be at room temperature. Vanilla sugar can be replaced with vanillin. Read more about this in a separate article at the link at the end of the recipe. You can use sour cream of any fat content. I have 20%. Turn the oven on 180 degrees.

Step 6

Step 6
Place softened butter, sugar, vanilla sugar and salt in a deep bowl.

Step 7

Step 7
Grind everything using a mixer or blender with a whisk attachment. This will take about 1-2 minutes.

Step 8

Step 8
Add eggs one at a time, mixing everything well with a mixer or blender each time.

Step 9

Step 9
Add sour cream and mix everything thoroughly again.

Step 10

Step 10
Sift the flour into a separate bowl. Thanks to sifting, the flour will be saturated with oxygen, and the cake will turn out fluffier and airier. You can read more about the properties of flour in a separate article, link at the end of the recipe. Add baking soda and baking powder to the flour and mix. You can also read about the nuances of using baking soda and baking powder in a separate article at the link after the last step.

Step 11

Step 11
Add the flour mixture to the liquid ingredients little by little, mixing thoroughly each time with a spatula or mixer at low speed. It is important to add flour in parts, because its exact amount depends on the properties of the flour itself, the size of the eggs and the fat content of the sour cream. Be guided by the consistency of the dough, it should turn out like very thick sour cream.

Step 12

Step 12
For this pie, it is better to use a springform pan. Mine has a diameter of 18 cm. For information on different baking forms, as well as how to calculate the amount of ingredients for forms with other diameters, read the articles linked at the end of the recipe. Cover the bottom of the mold with parchment (mine is siliconized, so I didn’t grease it with anything). Grease the sides of the pan with butter and sprinkle with flour. Place half of the dough into the mold.

Step 13

Step 13
Spread half the streusel and half the candied fruit evenly over the entire surface of the dough. My candied fruits were slices, so I first cut them into small pieces.

Step 14

Step 14
Pour the remaining batter into the pan and spread it evenly.

Step 15

Step 15
Sprinkle the remaining streusel and candied fruit over the dough. Place the pie in an oven preheated to 180 degrees for 45-50 minutes. The exact time depends on your oven. My pie took 50 minutes to cook. You can learn about the operating features of ovens by reading a separate article, link at the end of the recipe. You can check readiness with a toothpick. To do this, stick it into the middle of the pie and immediately take it out — if it is dry, then the pie is ready.

Step 16

Step 16
Remove the finished pie from the oven, cool slightly and remove from the pan. You can eat the pie right away, but it is better to let it cool completely, so it will not crumble when cutting. Bon appetit!
