Fluffy Kefir Pies: Perfect for Any Filling

Very tasty, beautiful, soft, oveny, airy! Yeast pies made with kefir in the oven are suitable for any filling, sweet or savory. I consider the dough for them to be one of the most successful, if only because it prepares quickly. The main thing is to mix it well. The baked goods rise well and do not fall!

Ingredients (8 portions)

Dough:

Wheat flour 500 g
Kefir 250 ml
Vegetable oil 125 ml
Dry yeast 10 g
Sugar 1 tbsp
Salt 1 tsp

Filling:

Rice 200 g
Eggs 2 pc
Green cilantro 10 g
Dill 10 g
Ground black pepper to taste
Salt to taste

Decor:

Egg yolks 1 pc
Sesame 1 tbsp

How to make kefir pies in the oven? Measure out the ingredients you need. You can take kefir of any fat content. You can replace dry yeast with fresh pressed yeast, based on a ratio of 1:3. That is, they will need to take 30 grams. You will learn how to replace yeast and other useful information by reading the article at the end of the recipe.

Pour kefir and vegetable oil into a saucepan. Stir. Place the saucepan over low heat and heat the mixture to 37-39°C, stirring constantly. Then remove the saucepan from the heat.

Pour sugar and salt into warm kefir and stir until completely dissolved.

Sift the wheat flour into a deep bowl.

Add dry yeast and stir.

Pour the kefir mixture into the well in the flour.

Knead soft elastic dough. Knead it for about 10 minutes. I do this in a food processor. Watch the consistency of the dough — you may need more or less flour than I did, keep this in mind. Read about the properties of flour in a separate article at the end of this recipe.

The dough should hold its shape well, be soft, elastic, and not sticky. Roll the dough into a ball.

Place the dough in a bowl, cover with a towel and leave warm for 30-40 minutes. We want it to rise a little bit.

Proceed with the filling. You can use any one. I have this boiled rice with egg. First boil the rice in plenty of salted water until half cooked. Place the rice in a colander and let the water drain. Refrigerate. Hard-boil the eggs, cool, peel and cut into small cubes. Wash the cilantro and dill and dry. Finely chop the greens. In a bowl, combine fluffy rice, eggs, herbs, salt and pepper.

Mix all filling ingredients well.

Divide the risen dough into 12-14 identical pieces (I got 14 pieces of 60 g each) and roll them into balls.

Flatten each ball onto a floured surface into small rounds.

Place 1-2 tablespoons of filling on each piece of dough.

Carefully pinch the edges of the dough.

Form the remaining pies in the same way.

Place the pies seam side down on a parchment-lined baking sheet. Leave them to proof for 10 minutes.

To decorate the top of the pies we need raw yolk. I also used sesame seeds, but you can do without them. Beat the yolk into a bowl and whisk with a fork.

Brush the surface of the pies with raw yolk and sprinkle with sesame seeds.
