Recipe instructions

Step 1

Step 1
How to make delicious roast pork with potatoes in the oven? A very simple dish. To begin, prepare the necessary ingredients according to the list. You can take pork pulp from any part of the carcass; during the cooking process, the meat will still turn out soft. I have pork tenderloin. You can add and change vegetables and spices to your taste. Zucchini and eggplant work well here.

Step 2

Step 2
Wash the pork and cut into medium pieces.

Step 3

Step 3
Peel the potatoes. If the tubers are small, it is enough to cut them into halves. Small tubers can be left whole. And cut large ones into 3-4 parts. In general, for roasting, all vegetables and meat should be cut into approximately equal medium pieces.

Step 4

Step 4
Cut a medium to large onion into four pieces. My onions are small, so I took two instead of one and cut them in half.

Step 5

Step 5
Cut the carrots into not very thin slices. I cut it into shapes to make the carrots look more interesting in the dish.

Step 6

Step 6
Peel the bell pepper from seeds and stems and cut into medium pieces.

Step 7

Step 7
Heat some vegetable oil in a frying pan. Fry the pork on it until golden brown. At the end, salt and pepper the meat. It is advisable not to salt the meat at the very beginning of frying, because then it will begin to release juice and instead of frying you will end up with stewing. We need to keep the meat as juicy as possible.

Step 8

Step 8
Combine all the vegetables in a bowl, pour in the remaining vegetable oil. Salt, pepper and mix everything. If you wish, you can add seasonings and dried herbs to the vegetables to taste. For example, a mixture of Provencal or Italian herbs is suitable.

Step 9

Step 9
Transfer meat and vegetables to a baking dish. Pour in the broth. If there is no broth, you can replace it with plain water.

Step 10

Step 10
Cover the pan with foil or a heat-resistant lid, if you have one, and place in an oven preheated to 180°C. Baking time is 1-1.5 hours depending on your oven. Check meat and vegetables periodically for doneness.

Step 11

Step 11
Sprinkle the finished roast with chopped herbs and serve immediately. Bon appetit!
