How to make a vegetable stew with meat, zucchini and potatoes in the oven? First, prepare all the products according to the list. Wash the meat and vegetables, peel the vegetables, and, depending on the piece, remove films and excess fat from the meat. I like to use pork neck for baking — it is quite fatty, but at the same time soft, and the fat during the cooking process will soak the vegetables, and the dish will turn out delicious!

Cut the meat into medium-sized pieces, not finely, so that each piece corresponds to one serving. Transfer meat to a bowl. Salt, pepper, lightly sprinkle with oil.

Cut the peeled vegetables into large slices. Turn on the oven so it has time to heat up.

Place pieces of meat on the bottom of the baking dish. I don’t grease the pan with anything, but be careful and check the dish so that it doesn’t burn. This shouldnʼt happen because both meat and vegetables release juices during the roasting process.

Scatter the vegetables on top of the meat. Place the filled pan in an oven preheated to 180 degrees, cover with a lid or foil and bake for about an hour. Determine the time and temperature based on your oven. 5-10 minutes before the end of baking, remove the foil from the pan and lightly brown the roast.

Serve the baked pork with vegetables hot with fresh or pickled vegetables and fresh herbs.
