How to bake potato wedges with cheese in the oven? Prepare the necessary ingredients. If you have young potatoes, then you should wash them very well under running water with a brush or sponge, dry them and don’t need to peel them. If you have mature potatoes, then they should be peeled and dried.

Choose tubers of approximately the same size so that the potatoes bake evenly in the oven. Cut each potato into 4 pieces.

Grate Parmesan on a fine grater. Instead of Parmesan, you can use any other cheese if you wish. Choose high-quality cheese, without vegetable fats, that melts well. Transfer the cheese to a wide bowl or plate and set aside, we’ll come back to it a little later.

Take an egg and wash it with baking soda in warm water, as there may be harmful bacteria on its surface. Break it into a deep bowl, whisk with a fork or whisk until smooth, add a pinch of salt, and add allspice and garlic powder if desired. Mix well again.

Wash the greens in running water and dry with paper napkins. Chop as finely as possible and add to the cheese. I have parsley, you can use other favorite herbs. Sprinkle with ground red pepper (if you like it spicy, add a pinch of chili pepper), but this is not necessary. Mix everything again.

Line a baking tray with baking paper. Place the potato quarters sideways on a baking sheet, at a short distance from each other (as in the photo). Cover the potatoes with foil (to prevent them from burning) and place in the preheated oven. Bake at a temperature of 180-200 degrees on the “top-bottom” mode for about 40 minutes.

After the specified time has passed, remove the foil. Change the mode to “grill” or turn on convection. Leave the potatoes in the oven until the cheese has formed a crust. This will take about 10-15 minutes. Check the readiness of the potatoes with a toothpick; they should be easily pierced and soft inside. Cooking times are approximate, be guided by the operating characteristics of your oven.
