Authentic Azerbaijani Chicken Bozartma Recipe

The national Azerbaijani dish is delicious chicken soup! Bozartma turns out to be quite fatty and rich. Therefore, if you want to reduce fat content, remove skin and excess fat from your thighs. There are many variations of this dish — there are recipes with the addition of carrots, bell peppers, prunes, tomatoes, cherry plums and much more. Ingredients (6 portions)

Basic:

Onion 1 pc
Salt to taste
Ground black pepper to taste
Butter 40 g
Water (hot) 2 l
Potato (large) 4 pc
Green onions (3-4 stems) to taste
Bay leaf 2 pc
Parsley to taste
Dill (3-4 branches) to taste
Chicken thighs 4 pc

Prepare the ingredients.

Cut the onion into half rings.

Melt the butter in a cauldron or deep frying pan and fry the onion until transparent.

Cut the chicken thighs in half and add to the cauldron with the onions. Fry together for about 5 minutes.

Peel the potatoes, chop coarsely.

Place the potatoes in the cauldron.

Add bay leaves to the soup. Add salt, pepper and mix. Pour in 2 liters of hot water and bring to a boil. Reduce heat and simmer covered for about 25 minutes.
