Ingredients (4 portions)

Basic:

Onion 1 pc
Garlic 2 clove
Tomatoes 4 pc
Salt to taste
Water 300 ml
Potato 500 g
Broccoli (can you take frozen) 150 g
Tomato paste 2 tbsp
Zucchini 200 g
Carrot 1 pc
Vegetable oil 20 g
Pork 500 g
Dry spices to taste
bell pepper 1 pc
Eggplant 1 pc

How to make a vegetable stew with meat, zucchini, potatoes, eggplant and tomatoes in a frying pan? Prepare the necessary ingredients for this. You can use any meat, but I like to cook it with pork most of all. An excellent option would be to take the neck part. The proportions of vegetables are approximate. You can change them to your liking. Wash all vegetables.

Cut the meat into small pieces. Pour vegetable oil into a hot frying pan and fry the meat for 10-12 minutes until it changes color and begins to brown a little. Cut the eggplants into pieces, add salt and cover with cold water. Leave to stand for 15-20 minutes to remove the bitterness.

Peel and chop the onions and carrots. There is no need to chop very finely, as during stewing all the vegetables will become very soft.

Chop the bell pepper and zucchini. You can take one type of pepper or different colors.

Add onions and carrots to the meat in the pan. Fry everything for a couple more minutes. A characteristic aroma will appear from the onion.

Next add bell pepper to the pan. Warm it up for another 2-3 minutes.

Peel the potatoes, rinse and cut. Add chopped potatoes and eggplant to the meat.

Mix everything with tomato paste and water. Add salt and spices to taste. Cover with a lid, bring to a boil and simmer over low heat for 15 minutes.

Then add broccoli, zucchini and chopped tomatoes. Pass a couple of cloves of garlic through a press. Leave to cook covered for another 15 minutes. You can add more water. This will make more gravy.
