Rinse the beef fillet, dry with a paper towel and cut into 3-4 pieces.

Wash the carrots thoroughly, peel and cut into strips.

Boil egg noodles in salted water. Usually the cooking time is indicated on the package. Drain in a colander.

Be sure to wash the eggs and cook for 8 minutes from the moment the water boils over medium heat. After finishing cooking, immerse the hot eggs in cold water for 10–15 minutes, slightly breaking the shells. Cold water will penetrate under the shell and the shell will easily be removed from the egg. Change the water 2-3 times until the eggs are completely cool. Peel the eggs and cut them lengthwise.

Chop the green onions. I prepared this soup after a holiday filled with a variety of dishes. So I made it from the simplest ingredients possible. My husband asked for “pepper,” so I served him chopped ginger and garlic, as well as some hot pepper. In general, you can add a variety of vegetables and herbs. In my opinion, spinach, celery, bell pepper, shallots, etc. would be appropriate here. So get creative!
