Hard cheese 20 g
Bay leaf 1 pc

How to cook Stracciatella soup? Prepare your food. Take one fillet from the breast. Eggs — category C0, any hard cheese, such as Parmesan. Along with onions, you can add leeks and any greens to the broth.

Wash the breast and place it in a saucepan. Toss it with a whole peeled onion and carrots, cut into small pieces. Also add bay leaf, peppercorns and any herbs to taste, I used parsley stems. Dried herbs will also work. Pour freshly boiled water over all the ingredients — this way you will get juicy chicken, and the broth itself will cook much faster.

Place the pan to cook over medium heat. Add salt. Wait until it boils, remove the foam with a slotted spoon. Reduce heat to low, cover the pan with a lid and leave the broth to simmer for 30 minutes. The article on saucepans, link at the end of the recipe, will help you choose the ideal pan.

Remove chicken and vegetables from broth. Strain the broth itself into another pan. Throw away the vegetables; they wonʼt be needed anymore.

Wait for the broth to boil and pour semolina into it in a thin stream while stirring. Boil it for about 3 minutes.

Meanwhile, crack the eggs into a bowl and beat them lightly with a fork. You donʼt need to beat the eggs too hard, just combine the whites with the yolks.

Pour the eggs into the soup, stirring them with a fork.

And immediately grate the Parmesan cheese into the soup. You can do it a little differently — grate the cheese into the eggs, mix and pour the cheese-egg mixture into the soup. Wait for it to boil again, simmer for a minute and turn off the heat. The soup is ready.
