German Eintopf Soup with Sausages

This nice German Eintopf will go great with a glass of beer! This is one of the soups “for the lazy”; it does not require frying the ingredients. Perhaps my favorite soup is savoy cabbage.

Ingredients (8 portions)

Basic:

Savoy cabbage 700 g
Potato 600 g
Carrot 100 g
Smoked sausage 300 g
Water 1.5 l

Optional:

Heavy cream 200 ml
Salt to taste

Prepare the ingredients. Boil water in a LARGE saucepan.

Cut the cabbage into strips (don’t chop them, just big ones), add them to the water, and let them cook.

Peel the potatoes, cut into large pieces.

Peel the carrots and cut into thick slices.

Add the potatoes and carrots to the cabbage (it will just sit in the pan, stir, cook for 20 minutes).

Cut the sausages into thick slices.

Stir them into the vegetable mixture and cook for another 10 minutes. Taste the soup and add more salt if necessary. If cream is used, add it either after removing the pan from the heat, or if you wish, pour it directly into the plates.
