Wash the chicken well in running water — the better you do this, the less foam will form when cooking the broth. You can even soak the chicken in cold water for about 30 minutes and then drain the water.

Place the chicken in a saucepan, cover with clean water, then bring to a boil, reduce heat and simmer, constantly skimming off the foam, for 30 minutes. Remove the chicken from the broth using a slotted spoon. The broth is ready. You can use it immediately, you can use it the next day, or you can even freeze this broth.
