Hearty Chicken Cabbage Soup

What Russian person would refuse a plate of rich cabbage soup? Cabbage soup made from fresh cabbage is a light and healthy dish. If you are counting calories, reduce the amount of vegetable oil to 1 tbsp, and add the broth to the frying immediately after adding the carrots.

Ingredients (4 portions)

Basic:

Salt to taste
Potato 400 g
Bay leaf 2 pc
Chicken breasts 1 pc
Carrot 150 g
Bulb onions 50 g
Vegetable oil 3 tbsp
Peppercorns 5 pc
Cabbage (young) 200 g
Tomato sauce (I use lecho ketchup) 2 tbsp

A set of products for cooking cabbage soup with chicken broth.

First of all, cook the broth. We rinse the chicken well, pour cold water 4-5 cm above the chicken, add salt and cook over medium heat for about 1 hour. Donʼt forget to skim off the foam thoroughly. When the chicken is ready, remove it from the broth and leave to cool.

Peel the potatoes, cut them into strips, and put them in the broth.

Shred young cabbage. Place it in the pan 10 minutes before the end of cooking the soup.

Be sure to skim off the foam that forms when cooking cabbage.

Chop the onion, fry in 1 tbsp. vegetable oil

Add carrots and a couple more tablespoons of oil to the onion.

Add tomato sauce or ketchup. I donʼt like fresh tomatoes in soup, but if you do, you can add them instead of sauce. Fry everything together for a couple of minutes.

Add 4 tbsp. broth and simmer for another 5 minutes. Add to the soup 5 minutes before it is ready.

Lastly, add the peppercorns and bay leaf. Cut the cooled chicken into pieces, or disassemble into fibers and add to the soup. When serving, top with sour cream and herbs.
