Refreshing Chicken Okroshka on Kefir

Traditional summer dish. It will satisfy your hunger even on the hottest day! For me, the taste of okroshka on kefir has been an integral component of summer since childhood. In the warm season, sometimes it gets so hot that you don’t even want to think about hot food, but your stomach demands food. This is where this recipe, simple to the point of genius, comes to the rescue. It is also convenient that the base for okroshka can not be filled with kefir, but mixed with mayonnaise or sour cream — you get a quite satisfying and at the same time refreshing salad. The advantage of this recipe is the use of boiled chicken breast as the meat component. It has a delicate taste and unique aroma, which only intensifies when adding bay leaves during cooking. It’s impossible to resist such okroshka!

Ingredients (4 portions)

Basic:

Salt to taste
Ground black pepper to taste
Cilantro, coriander (ground) to taste
Potato 2 pc
Green onions 1 g
Bay leaf 1 pc
Chicken breasts 200 g
Table vinegar 1 tbsp
Dill 1 g
Chicken eggs 2 pc
cucumbers 2 pc
Radish 60 g
Kefir 300 ml
Mineral water 250 ml

Cut the chicken breast into small cubes, boil in boiling water with bay leaf, salt and pepper (3 minutes).

Peel the potatoes and cook until tender (20-30 minutes). Cut the finished potatoes into cubes. Boil the eggs hard (for 10 minutes), cool in running water. Place the cooked breast and chopped potatoes into a large bowl.

Peel boiled eggs, cut into cubes. Add to a bowl with chicken breast and potatoes.

Cut cucumbers and radishes into cubes and add to other ingredients.

Finely chop the green onions and dill and add to the bowl.

Mix kefir, sparkling water and vinegar in a plate.
