Creamy Chicken Pea Soup

Cream soup is a delicious find for a family lunch! This was my first experience making pureed soup and testing a new blender. The soup came out really tasty, aromatic and rich (for some reason it reminded my husband of kindergarten). To prepare it, I took peas in halves — they do not require soaking and boil quickly.

Ingredients (2 portions)

Basic:

Onion 1 pc
Salt 1 tsp
Ground black pepper 0.3 tsp
Potato 2 pc
Chicken breasts 0.5 pc
Carrot 1 pc
Bread 30 g
Sunflower oil 1 tbsp
Peas 0.5 cup

Letʼs start preparing the soup by preparing the necessary ingredients. Peel onions, carrots and potatoes and wash thoroughly.

We wash the peas and put them in a saucepan along with the chicken breast and salt. Pour water and place on medium heat.

Meanwhile, finely chop the onion.

Grate the carrots.

After the soup boils, reduce the heat and skim the foam from the surface of the soup. Add carrots and onions to the pan. Cook the soup until the peas are ready. It took me 40 minutes.

Cut the potatoes into cubes.

We take the already prepared chicken breast out of the soup, and instead add chopped potatoes and ground black pepper. Cook the soup until the potatoes are ready. Remove the pan from the heat and cool the soup.

When the temperature of the soup reaches about 40 degrees (this is an acceptable temperature for working with a blender), puree the soup. To do this, use a blender attachment with a small knife. The consistency of the puree soup should be thick enough so that the pieces of meat placed on top do not fall into the soup, but be thinner than porridge.

Cut the cooled chicken breast into pieces.

We form crackers from a piece of bread, frying them in sunflower oil until golden brown.

Now all that remains is to heat up the cooled puree soup and pour into plates. Place pieces of meat on each plate. When serving, serve the soup along with croutons. Bon appetit!
