Hearty Bean Soup: A Protein-Packed, Nutritious Delight

A hearty, tasty, nutritious soup that lovers of legumes will love. Our family really loves soups with peas and beans, but we also liked the recipe with beans! Beans have a more delicate taste and aroma. They are rich in protein, so soup with them is no less satisfying than soups with added meat. This delicious hot soup will help you out during Lent. Vegetarians will also appreciate this dish. It is also important (especially in winter) that bean soup with vegetables is rich in vitamins.

Ingredients (9 portions)

Basic:

Salt (I have 1.5 tsp.) to taste
Potato 400 g
Parsley 0.5 g
Carrot (large) 1 pc
Bulb onions 1 pc
Vegetable oil (for frying roots and onions) 3 tbsp
Dill 0.5 g
Parsley root 1 pc
White pepper 0.5 tsp
Beans 500 g

We start preparing the soup by thoroughly washing the beans and soaking them in cold water 1:3. I soaked them overnight. They increased in volume by approximately 2.5 times.

Products for making soup. The roots, onions and potatoes are peeled, they and the greens are washed.

Some housewives cook legumes in the same water in which they were soaked. I drain this water, rinse it and fill it with new water so that it lightly covers the beans. I bring the contents of the pan to a boil, drain the water. Fill the beans with the new required portion of water, cook under a closed lid until soft without adding salt. I assure you that the intestines tolerate legume food prepared in this way much easier. My beans were cooked in less than an hour.

While the beans are cooking, chop the carrots and parsley into small cubes and finely chop the onion.

Then fry the chopped vegetables in a frying pan in vegetable oil for 10 minutes over medium heat.

Cut the potatoes into large cubes.

Place fried onions, carrots, parsley in the pan in which the beans are cooked, bring to a boil, cook for 10-15 minutes over medium heat.

Add potatoes, spices and cook for 20 minutes, then add salt. Test the potatoes to see if they are done and bring the soup to a boil.

Chop your favorite greens. I have a mixture of parsley and dill.

Pour the prepared hot soup into a plate, season with sour cream, sprinkle with herbs and enjoy. Try it, this soup is very tasty!
