Creamy Spinach Soup

Delicate, fast, rich, healthy and flavorful! I used frozen spinach for this creamy soup. But you can use fresh or canned. The soup is suitable for babies if you do not add spices and use less fatty cream. The recipe is simple, even novice housewives can do it!

How to cook delicious creamy spinach soup? Very simple. To begin, prepare the necessary ingredients according to the list. You can use fresh, frozen or canned spinach. I used frozen spinach. You can change the ratio of spinach and potatoes to your taste. Cream is suitable for any fat content. I have 20%. But keep in mind that depending on the cream, the calorie content of the finished dish will change.

If you are using frozen spinach, there is no need to specifically defrost it. If the spinach is fresh, rinse it thoroughly and dry it. You can remove the cuttings, leaving only the leaves.

Peel the potatoes and cut into small cubes.

Peel the onion and cut into small cubes.

Wash the dill, dry and finely chop.

Melt the butter in a heavy-bottomed saucepan over medium heat. Add the onion and fry in butter until golden brown.

Add the potatoes to the onion and, stirring, fry everything together for 2-3 minutes.

Pour in 500 ml of boiling water, bring to a boil and simmer the soup over low heat for 15-20 minutes until the potatoes are ready.

Add spinach and chopped dill. Season the soup with salt and pepper, add dry garlic, salt and pepper. Cover the pan with a lid, bring to a boil and cook everything together for 5-7 minutes.

Blend the soup with an immersion blender until smooth.

Return the soup to low heat. Pour in the cream. Stirring, bring the soup to a boil and immediately remove from heat. You can adjust the thickness of the soup to taste by adding more or less cream.
