Ingredients (6 portions)

Basic:

Salt 1 tsp
Wheat flour (5-6 tbsp. with a slide) 8 tbsp
Water 3 l
Peppercorns (black) 4 pc
Dill (crushed) 3 tbsp
Chicken eggs 2 pc
Turmeric 0.1 tsp
Duck (more is possible) 0.5 kg
Garlic powder 1 tsp

How to cook duck soup? Clean, singe the duck carcass and wash it well inside and out. Place the duck in cold water and cook over low heat, season with salt and add your favorite spices. The meat will taste better with spices. The duck broth is cooked for 2-2.5 hours with the slightest gurgling. You can cut the bird carcass into smaller pieces.

While the broth is cooking, start preparing the noodles. Break the eggs into a convenient bowl.

Add salt and turmeric to the eggs.

Beat the eggs with a whisk until smooth.

Add sifted flour to the eggs in small portions and begin kneading the dough.

Finish kneading the dough on a floured surface. Knead it with your hands. Place the finished elastic, smooth dough in a bowl and cover with film. It should sit for at least half an hour so that the gluten relaxes, and then you can roll out the dough thinly for cutting noodles.

Finely chop the onion and add it to the broth, let it cook and saturate it with taste and aroma. For those who don’t like onions — if it cooks for quite a long time and you chop it as finely as possible, it will boil over; you won’t find it in the noodles. But the aroma and taste will be much better!

Cut the dough into 4 parts. If you have a small table or you roll out on a board, then into 6 parts.

Roll out the dough very thin, dusting the counter with flour. Let the dough dry a little.

Roll the dough several times and cut it into thin strips.

Remove the finished meat from the broth (you can disassemble it and remove the bones). Place the noodles in the broth to cook. Stir. Cooking time depends on the thickness of the dough and its density. Try it and donʼt overcook it. Add salt and spices during the process.
