How to make fish soup from a pike head at home? Prepare all the necessary products. For cooking, I used the head and tail of the fish. If you have frozen fish, then defrost it first until the head and tail are completely melted. Read about all the intricacies of proper defrosting in a separate article, link at the end of the recipe. Be sure to remove the gills from the head, otherwise the broth will taste bitter.

Remove any remaining scales from the pike, if any. Wash the head and tail and place in a saucepan. Fill with cold water, add a few peas of black or allspice, as well as a bay leaf. Bring to a boil over high heat. Remove the resulting white foam with a spoon. Reduce heat to low and simmer the broth covered for 30-45 minutes. Open the lid slightly to allow steam to escape.
