How to cook classic rassolnik with rice? Prepare all the necessary ingredients. You can use any part of the chicken for the broth. Letʼs prepare the vegetables. Peel the onion. Wash carrots and potatoes in running water with a brush, peel and rinse in water. Rinse the rice several times until the water remains clear.

Rinse the chicken in running water and place in a saucepan. Fill with cold water, put on fire and bring to a boil. Cook in boiling water for 30 minutes. When boiling, foam will form that must be skimmed off. Then remove the chicken from the pan using a slotted spoon, cool slightly and separate the meat from the bones.

Strain the broth and return to the heat. Place chicken meat in it. Bring everything to a boil. The broth can be strained through several layers of cheesecloth or a clean kitchen towel. This will remove any remaining foam and make it clean and transparent.
