Recipe instructions

Step 1

Step 1
How to make kholodnik with kefir? Prepare the necessary ingredients for this. Boil the eggs in boiling water for 7-8 minutes. Then drain the hot water, pour cold water over the eggs and let stand. This will make it easier to peel the eggs. Rinse the cucumber.

Step 2

Step 2
Also, boil the beets in advance until tender in boiling water. Cooking time will depend on the size of the beets. Young beets will cook faster. Focus on its softness by piercing it with a knife — the knife enters the cooked beets without effort. Allow the finished beets to cool completely. Then peel the beets and grate them on a coarse grater.

Step 3

Step 3
Peel the boiled eggs and cut them. There is no need to cut too finely.

Step 4

Step 4
Cut the cucumber and fresh herbs into pieces. You can use whatever you have as greenery. It could be dill, parsley, green onions. You can add one thing or just a little bit, as you like.

Step 5

Step 5
Place beets, eggs, cucumber and herbs in a saucepan. Pour in kefir, add a little salt and mix well. If kefir is thick, you can dilute it a little with water. If desired, you can add fresh radishes and cottage cheese. But choose coarse cottage cheese so that it can be felt in the dish. Place the finished refrigerator in the refrigerator for an hour or two to cool properly. When serving, the kholodnik can be supplemented with sour cream and hot boiled potatoes. Bon appetit!
