How to cook delicious creamy broccoli soup? A very simple recipe that even a novice cook can handle. To begin, prepare the necessary ingredients according to the list. You can use fresh or frozen broccoli. You need large potatoes; if the potatoes are medium-sized, it is better to take 3-4 pieces. The more potatoes, the thicker the soup will be.

Step 2

Step 2
Cut the stem off the cabbage. The weight of the remaining part with inflorescences should be 500 g, so take cabbage with a reserve. Disassemble the remaining part into inflorescences.

Step 3

Step 3
Place the florets in a bowl of cold salted water and leave for 10 minutes. If there are bugs in the cabbage, they will float to the surface.

Step 4

Step 4
Then drain the water and cut the cabbage into small pieces.

Step 5

Step 5
Peel the potatoes and cut into medium cubes.

Step 6

Step 6

Step 7

Step 7
Chop the garlic with a knife.

Step 8

Step 8
Boil 1 liter of water in a saucepan, add potatoes and broccoli. Salt everything and mix. Bring the water to a boil and cook the soup over medium heat for about 10 minutes.

Step 9

Step 9
Meanwhile, melt the butter in a frying pan and saute the onion and garlic for about 2 minutes until fragrant.

Step 10

Step 10
Transfer the onions to the soup pot. Boil everything together for 5-7 minutes at a low simmer or a little longer until the vegetables are ready.

Step 11

Step 11
Grind the soup thoroughly with an immersion blender until smooth and pureed.

Step 12

Step 12
Pour in the cream and stir. You can add more or less cream and the fat content you like best. Also consider your preference for the consistency of the soup. Return the pan to the heat, bring to a boil, but do not boil.

Step 13

Step 13
Season the soup with salt and pepper to taste. And as soon as the first bubbles appear, remove the pan from the heat.

Step 14

Step 14
If you wish, you can make croutons from a wheat baguette. To do this, cut half of the baguette into not very thick slices. Heat the butter in a frying pan and fry the croutons on both sides until golden brown. Rub the fried croutons with garlic and lightly salt.
