Wheat flour 1 tbsp
Butter 30 g
Water 1 cup
Parsley 10 g
Bulb onions 100 g
Chicken eggs 1 pc
Mint 2 g
Green cilantro 10 g
Wheat groats (either bulgur, couscous) 60 g
Matsoni (or kefir (then you need to take 0.5 cups of water) 1 cup

Preparing the ingredients. Real salvation will only be achieved if you do not deviate from the traditional composition of the ingredients of the dish. But ingredients such as matsoni cannot always be found in the store. Therefore, you can take regular fat kefir. In this case, the amount of water must be halved. Wheat can also be replaced with bulgur or couscous if desired.

Wash the wheat well and soak it overnight; it will swell well, which will shorten the cooking time and the soup will be richer and tastier.

Then drain the water, wash the wheat and cook in salted water for about 25 minutes.

Add a tablespoon of sifted flour. Mix the mixture thoroughly so that there are no lumps.

Add matsun and water to the egg mixture.

Pour the mixture into the pan with the cereal and put it on the fire. Bring it to a boil, stirring with a wooden spatula.

At the same time, heat a piece of butter in a frying pan and fry the onion until golden.

Reduce the heat to medium and cook the soup, stirring constantly so that the mixture does not curdle.

Finely chop the cilantro and parsley and add to the pan with the soup.

Add the fried onions and butter there and mix. Cook for about 10 more minutes. Turn off the fire.

Let the soup sit covered for about 15 minutes. Serve hot or cold, with fresh herbs and bread. You can throw in a couple of mint leaves; with this serving, the spas will be especially refreshing. Bon appetit!
