Hearty Meatball and Rice Soup

A classic first course with meat and potatoes! This soup with meatballs and rice is very easy to cook; any housewife can handle it. You can adjust its thickness and composition of products, adjusting them to your own tastes and preferences.

Ingredients (6 portions)

For 2 liters of water:

Salt to taste
Ground black pepper to taste
Water 2 l
Rice 200 g
Eggs 1 pc
Potato 3 pc
Carrot 1 pc
Vegetable oil 2 tbsp
Minced meat 300 g

How to cook soup with meatballs and rice? Prepare the necessary ingredients. You can use any minced meat: pork, beef, mixed, chicken. Rice too, I have long white rice. Wash the vegetables thoroughly and dry. Wash the egg too.

Transfer the minced meat to a suitable bowl. Add egg, salt and spices to it.

Mix the minced meat well with a spoon or your hands.

Pinch off pieces from the minced meat and form small round meatballs. To prevent the meat from sticking to your hands, moisten them with water.

Peel the washed vegetables. Cut the potatoes into cubes. Grate the carrots on a coarse grater.

In a thick-bottomed saucepan, fry the carrots and potatoes in vegetable oil for about 5 minutes, stirring them with a spoon or spatula.

Rinse the rice well in five waters. Then add the rice along with the bay leaf to the roasting vegetables. Continue stir-frying for 1 more minute.

Pour 2 liters of hot water into the pan and stir.

Cook the contents of the pan for about 5 minutes over medium to medium-low heat.

Place the meatballs into the boiling water one at a time. Be careful not to get burned by splashing hot water.

Cook the soup over medium heat for 15 minutes, periodically removing the foam and stirring from bottom to top. The finished meatballs should float to the top. Taste the soup and, if necessary, add salt and pepper to taste.

Let the soup simmer, covered, for about 10 minutes and pour into bowls, sprinkle with chopped herbs.
