Basic:

Onion 1 pc
Salt to taste
Ground black pepper to taste
Butter 15 g
Water 1.5 l
Potato 3 pc
Chanterelles 250 g

How to cook fresh chanterelle soup? Prepare all the necessary ingredients.

Wash the mushrooms under running water and cut into pieces. Small mushrooms can be left whole.

Wash the potatoes under running water with a brush, peel, rinse and cut into cubes.

Place the mushrooms and whole onion in a saucepan, cover with cold water and bring to a boil. Cook, skimming off the foam, until the chanterelles settle to the bottom. How to choose a soup pot, read the separate article at the end of this recipe.

Place the potatoes in the pan with the chanterelles. Boil the soup until the potatoes are ready.

Season the soup with butter and let it simmer, covered, for 7-10 minutes. Wash the dill in running water, dry and finely chop with a knife. Pour mushroom soup from fresh chanterelles into serving bowls. Serve with dill and sour cream. Bon appetit!
