Letʼs prepare the ingredients. We will cook semolina soup with minced meatballs. You can prepare minced meat yourself from fresh meat or purchase it ready-made in the store. If desired, to reduce the calorie content of semolina soup, you can use minced poultry. Add salt and ground black pepper to taste to the bowl with minced meat and mix. Make small meatballs with hands moistened with water.

Wash the potatoes, peel them and cut them into cubes or strips, as you like. The cooked potatoes need to be washed again and excess starch removed so that the broth is light. Place the potatoes in a saucepan and fill with clean cold water. We put it on fire.

Wash the carrots, peel and grate on a medium grater.

Peel the onions and finely chop them.

Pour vegetable oil into the frying pan and turn on the heat. When it warms up, place the cooked carrots and onions in the oil. Fry them until lightly browned.

Place the fried vegetables in a pan with potatoes. Add spices to taste: salt and black peppercorns. Cook for ten minutes from the moment the water boils over medium heat. Remove the foam from the surface of the broth with a slotted spoon.

Then add the meatballs into the boiling broth in batches to prevent them from sticking together. Immediately stir the soup with a spoon so that they do not stick to the bottom of the pan. Cook the soup for about 10 more minutes from the moment the broth boils.

Then pour semolina into the boiling broth in a thin stream. Mix immediately so that the semolina does not form lumps. Cook for about five minutes from the moment it boils. Turn off the fire. Let the soup sit covered in the pan.
