Basic:

Salt to taste
Ground black pepper to taste
Water 3 l
Beet 1 pc
Carrot 100 g
Bulb onions 1 pc
Vegetable oil 3 tbsp
Greenery (parsley, dill, green onions) 20 g
Meat (beef, chicken breast, pork — your choice) 500 g
Sauerkraut 300 g

How to cook borscht without potatoes? Prepare all the necessary products. Take any meat, but beef or chicken is better, they will make the dish lighter and less caloric. Pre-cook the beets in their skins or bake them in the oven, so their color and beneficial properties will be better preserved, and the borscht will be brighter.

Rinse the meat well and put it on the fire, after boiling, remove the foam, boil for 5 minutes, drain the first broth and add fresh water, this way the broth will be healthier. Add the bay leaf and cook the meat for about an hour.

Wash the onions and carrots, then peel them. Chop the onion and grate the carrots on a coarse grater.

After heating a frying pan with vegetable oil, fry onions, carrots and tomato sauce. If desired, you can replace the tomato sauce with fresh tomatoes or tomato paste.

Peel the baked beets and grate them on a coarse grater.

After removing the finished meat and bay leaf from the broth, add the roast and beets to the pan.

Throw sauerkraut into the borscht, boil for 5 minutes, add salt and pepper to taste.

Rinse the greens thoroughly under running water and chop finely. From the greens I took parsley and green onions, you can also add dill or cilantro.

5 minutes before the borscht is ready, throw the greens into the pan. Let the dish brew for another 5-10 minutes after cooking and serve hot with sour cream and garlic. Bon appetit!
