Hearty Beef Stew with Sauerkraut

Ingredients (6 portions)

Basic:

Onion (large) 1 pc
Garlic (2-6 cloves) to taste
Salt to taste
Water 0.5 l
Bay leaf 2 pc
Tomato paste 2 tbsp
Beef 1 kg
Carrot (medium size) 2 pc
Vegetable oil 6 tbsp
Dry spices to taste
Paprika 2 tbsp
bell pepper 1 pc
Greenery to taste
Flour 1 tbsp
Sauerkraut 400 g

How to make beef stew with sauerkraut? Prepare all the ingredients indicated in the recipe. If you have frozen meat, remove it from the freezer in advance and leave it at room temperature until completely thawed.

Rinse and dry the meat. Cut the beef into small pieces of equal size and dredge in flour.

Step 3

Heat 3-4 tbsp in a deep, large frying pan. vegetable or olive oil. Send the beef to fry. Cook, stirring occasionally until golden brown and appetizing.

Peel the onions, carrots and garlic. Adjust the amount of garlic to your taste. Cut the bell pepper into two parts and remove the core and seeds. Rinse everything. Cut the vegetables into small cubes.

In a separate frying pan, heat the remaining vegetable oil and fry the onion until translucent. Add chopped garlic and simmer for about another minute.

Add ground paprika, stir and fry everything together for a minute.

Add carrots, bell peppers and tomato paste to the frying pan.

Stir and keep on low heat for about 3-5 minutes. Stir everything periodically so that nothing burns.

Add your favorite spices and seasonings, as well as bay leaf, to the pan. For spices, I took a pinch of thyme, thyme and allspice.

Add sauerkraut along with brine to the roasted vegetables.

Stir and keep on the stove for two to five minutes.

Place the cabbage and vegetables in the pan with the fried beef. Pour in 0.4-0.5 l. cold water.

Mix everything, add salt to taste and leave over high heat until it boils. Next, cover the frying pan with a lid, reduce the heat to low and simmer the beef and cabbage for at least an hour and a half (I simmered for about 1 hour 50 minutes).

Sprinkle the finished dish with finely chopped herbs and serve hot.
