Cheesy Tomato-Baked Fish Fillet

Quick, simple and tasty, from any fish fillet! Fish with tomatoes and cheese is good because it is very easy to prepare. It takes at most 20 minutes to prepare the products; the rest of the time the fish is marinated and baked in the oven. The composition of vegetables can be changed to suit your taste; use frozen assorted vegetables.

Ingredients (4 portions)

Basic:

Onion (large onion) 1 pc
Tomatoes 150 g
Salt to taste
Ground black pepper to taste
Hard cheese 80 g
Vegetable oil 1 tbsp
Dry spices (spice mix for fish) 0.5 tsp
Mayonnaise 100 g
bell pepper 1 pc
Fish fillet (any fish, red or white, I have pollock) 500 g

How to bake fish with tomatoes and cheese in the oven? Itʼs very simple. To begin, prepare the necessary ingredients according to the list. The fillet of any white or red fish is suitable for this recipe. You can take fresh or frozen fish. Frozen fish must first be defrosted by transferring it from the freezer to the bottom shelf of the refrigerator.

Rinse the fish fillet and dry. I use ready-made pollock fillets. Instead of fillet, you can use whole fish, which must first be cleaned and cut into portions.

Peel the onion and cut into rings.

Cut the tomatoes into slices or circles. If you have cherry tomatoes, cut them in half. Choose tomatoes that are juicy but firm. Soft fruits do not hold their shape well; during cutting and cooking, they will spread into a shapeless mass and spoil the appearance of the dish. To make the dish bright and beautiful, I use vegetables of different colors.

Peel the sweet pepper from seeds and cut into rings. You can replace or add the vegetable part to your liking.

Grate the cheese on a coarse grater. I like to grate cheese on a grater for Korean carrots — when baked, it turns out to be a beautiful openwork web. I have regular Russian cheese, but any to your taste will do.

In a bowl, mix mayonnaise, onion, fish spices, salt and pepper.

Place the fish in mayonnaise and marinate in the refrigerator for 20 minutes.

Place the fish with the marinade in a baking dish greased with vegetable oil. Place most of the onions on the bottom of the pan, and spread the fish on top. When baked, the fillet will not burn or dry out.

Next, distribute the bell peppers, tomatoes and grated cheese. Bake in an oven preheated to 200°C for 25-30 minutes or longer until the fish is cooked.
