Ingredients (8 portions)

For dough:

Salt 1 tsp
Sugar 2 tsp
Wheat flour 2 cup
Water 100 ml
Milk 500 ml
Vegetable oil 3 tbsp
Chicken eggs 2 pc

For filling:

Salt to taste
Ground black pepper to taste
Bulb onions 1 pc
Minced meat 300 g
Greenery 10 g

To grease the pan:

Vegetable oil 50 ml

How to make pancakes with meat or lazy pasties? Prepare all the necessary ingredients. Start by preparing the dough. The milk and eggs must be at room temperature for the batter to turn out well. Therefore, remove them from the refrigerator in advance — 1-2 hours.

Wash the eggs with soap. In a deep bowl, beat eggs with sugar and salt. There is no need to whip until foamy.

Then add milk and stir until smooth.

Sift the flour so that it is saturated with oxygen and the pancakes turn out airy. Make a well in the flour and pour the egg-milk liquid component of the dough into it. Mix with a whisk until smooth. Add the rest of the flour in small portions until the dough is as thick as heavy cream.

Add vegetable oil, stir. Then pour in boiling water and immediately stir quickly. Leave the dough to rest for 15-20 minutes.

While the dough is resting, make the filling. You can take any greens — parsley, cilantro, thyme, dill. I took dill.

Peel the onion, rinse and finely chop. Place the minced meat, herbs and onions in a deep bowl for easy mixing.

Add salt and pepper to taste and thoroughly knead the filling until smooth. If it is difficult to knead, add a little water and mix again.

Take a frying pan with a diameter of 22 cm — a pancake pan or one in which you are comfortable baking pancakes. Heat the pan until hot. Grease with vegetable oil. Turn the heat to medium, mine is 7 out of 10. Pour some batter onto it and, turning and tilting it, distribute it all over the bottom. And right away. While the dough is still liquid, place about a tablespoon of filling on one half.

Using a spatula, lift the free half of the pancake and cover with the filling. Carefully, so as not to tear the dough, press the edges so that they stick to each other.
