The simplest, with a minimum of products, for breakfast! Fluffy kefir pancakes without eggs — a recipe for delicious thick pancakes made from just a few ingredients. Despite the absence of eggs, the pancakes turn out incredibly airy. I doubted that this was possible, but it worked out!

Basic:

Salt 1 tsp
Sugar 2 tbsp
Wheat flour 2 cup
Soda 1 tsp
Kefir 500 ml

How to make fluffy kefir pancakes without eggs? Prepare your food. Kefir is suitable for any fat content, I have 2.5%. It is preferable if it is warm — this way the flour will disperse better, without lumps, and the soda will react faster. But I cooked with kefir from the refrigerator, and everything worked out for me.

Pour kefir into a bowl, add sugar and salt. I wrote the amount of sugar based on my taste; the author of the recipe has it twice as much (4 tbsp). See for yourself here, if you like it sweeter, increase it. Mix the ingredients. Sift flour into kefir. Donʼt pour it all at once, start with half.

Stir the flour until the dough is homogeneous and free of lumps. Be prepared for the fact that you may need more or less flour than stated in the recipe. Look at the consistency of the dough — it should become like very thick sour cream. If suddenly the dough turns out to be too thick, pour in a little more kefir. Add baking soda as the last ingredient. Stir and leave to stand for 5 minutes — during this time the reaction between kefir and soda will begin, the dough will bubble noticeably.

Heat a frying pan well over high heat, it is better if it has a non-stick coating. Pour some vegetable oil on it. Spread the dough to form pancakes. Fry them over medium heat until browned. I covered the frying pan with a lid so that the pancakes were properly cooked inside.

Turn the pancakes over to the other side and fry them until golden brown. Remove the finished pancakes to a plate. You may want to re-oil the pan before your next batch. But I fried it without it — it didn’t affect the fluffiness at all.
